So as Funkengreuven posted: You can indeed just edit the FOV with the hotkeys and if you go high enough you can make the cellphone and the game text for sleeping and such viewable. Hey pal. You have to set the resolution in game to the eyefinity/surround resolution that your using. For example, if you are using three 1920x1080 displays, then your surround/eyefinity resolution would be 5760x1080.
