Title says it all. Why would I get 5040 x 1050 and not 5760 x 1080?
I can see it as a selection but the later is not recommened. But if I do switch do it, funny stuff happens like screen is there but cant' type or use keyboard, etc.

Running 2d Surround with two gtx 465's and three 23" Monitors.. Any ideas?

What driver version are you using?

I have never had an actual problem like yours, but whenever I switch to Surround it starts in 5040x1050, and I have to switch it to 5760x1080. No problems once I do that though, so I'm not sure what is up with yours.
