I have no specific recommendations, but can get you started:
1. Use MonitorMixer,

A. Some magical PLP layouts hide a bezel. Decide now if you are that person (to either hunt them down or disqualify them).
B. Some layouts have hanging sides, some don't. It makes zero difference. Decide if you care. If you care, it will be harder to get the exact game-canvas-shape you want, with the inner-bezels exactly where you want them (because sides are often skinnier on aesthetically-aligned-heights; you must decide if aesthetics is important to you-- i.e. the look of your furniture basically. I personally love hanging sides, it is another thing you can use. But whatever, real minor, either way).
C. If you don't like the layouts your sides will create, seriously consider NOT using them. I.e. start fresh, buying the center of your dreams, then buy shitty used sides that will line up (so you end up paying little more than if you used your current sides). If do this, you get exactly shape you want for little extra cash. You would be happier than buying more toward a layout you don't actually want.....
D. Perhaps the wisest layout-choice allows upward growth (if you want Big now & Huge later). For example, you buy PLP_Layout_A, which has sides that can be used on a bigger better center (your future upgrade-purchase intention for a future PLP_Layout_B). There are a number of good layouts that have this flexibility, you just gotta find them. If do this, you can reuse some expensive sides & plonk in new center.
E. If you drop the resolution on side monitors, the image on sides is not as crisp. But it still looks good, a perfectly legit choice (I use it happily; it also gives you greater flexibility, for matching). It is also completely unnoticed ingame (because it looks good, but you aren't even looking at it; you look at center, sides are peripheral vision).
3. Graphics card: There is no point thinking about it until you know your ballpark pixel-count. Let us know (your decided total width x center's height).
