Using the Beta 301.24 drivers, the following has changed in Surround Mode (I never use Extended Desktop Mode):
1) Windows Taskbar on center monitor only (new default): This is implemented poorly (and feels like a hack), as the left and right monitors have no task bar at all, and the Aero Thumbnails (when you hover over an open application on the taskbar) flicker and are misaligned. I have disabled this so that the taskbar stretches across all three monitors, so I use the task bar the same as before (with the bonus of broken Aero Thumbnails).
Tried UltraMon but it does not "fill-in" the left and right monitors with task bars like it does in extended desktop mode.
To disable the Start Menu on center screen only: NVIDIA Control Panel -> Desktop (very top menu option) -> Surround Displays -> (uncheck) Confine Taskbar to Center Display.
To disable just the aero taskbar thumbnails use "Taskbar Thumbnail Tweaker 1.1".
2) Start Menu - I am used to the Start Menu being on the far left now, so I just use that, I no longer use Vista Start Menu as it takes too long to run first use. I do still use "Classic Shell" which replaces the Win7 Start Menu with a Classic Start Menu (like XP). I do still have the row of Quick Launch icons on the left side for all my games, works well, and allow pinned and open applications to be on the center task bar.
3) Maximize to current monitor only. This works pretty well (new Nvidia defaults), so I have uninstalled Matrox PowerDesk. The windows do maximize non-standardly though (seems to be a 1 pixel border all the way around the maximized windows, and the corners are still rounded unlike a standard maximized window, must be some trick Nvidia employed).
4) My favorite media player, Zoom Player, fails to work correctly with the new drivers (crashes), and I have switched to KMPlayer. After some tweaks, I have KMPlayer working almost as good as Zoom Player, so made the switch. (Features like resume playback where left off, auto-play all episodes in the same directory, full screen (all 3) playback with black screens left and right, were the important features for me).
5) Drivers run great for games, running Alan Wake maxed out triplewide, and having a blast. Adaptive V-Sync is a win, smooths out gameplay. TXAA is hit and miss, can make some text blurry, so I don't use it.
6) As a replacement for "Autosizer", which does not work with 64 bit Windows yet, I am now using "WinSize2", and so far so good, allows me to train Windows to pop up in certain locations across my triplewide desktop. (e.g. I have a "Desktop Left" shortcut and a "Desktop Right" shortcut that open correctly on those monitors.

Let's hope they read this kind of feedback and properly implement a Surround Desktop solution as we spend alot of time in desktop surround mode, not always gaming (and I refuse to use extended mode, messes up all my icons, resolutions, monitor order, etc)...
